Because of that popularity, we've just released a new member of the family: Vintners for Port & Sherry. This Cheddar has been aged a full 50 months and is especially graded and selected to complement the richer and sweeter flavours of most ports and sherry.

A MID-WINTER WARM-UP SNACK!
Aged Cheddar Corn Muffin Fritters.

Cheer up a dreary winter evening with this tasty cheese fritter snack and your favourite dipping sauce or salsa. |

- • In a large bowl, combine corn meal, flour, sugar, baking powder, salt, and pepper.
- • In a medium bowl, combine milk, eggs, green onions, herbs, and hot sauce, if desired.
- • Stir into corn meal mixture. Let stand 5 minutes for batter to thicken slightly. Fold in cheese.
- • Heat oil (about 4-inches/10 cm deep) to 350°F (180°C) in deep fryer, or in a deep saucepan.
- • Drop spoonfuls of batter into hot oil, a few at a time. Cook 3-4 minutes, turning frequently, until floating and lightly golden.
- • Transfer onto paper towels.
- • Repeat until all batter has been used up. Serve warm.
Makes approximately 36 fritters.
Tips:
- • To make ahead, prepare and store at room temperature for up to 1 hour, or in refrigerator if longer. Reheat in 350°F (180°C) oven for approximately 8-10 minutes, or until hot.
- • If desired, serve with caramelized onion chutney, or your favourite dipping sauce.

Balderson Cheddars are appearing on more and more restaurant menus.
In our last newsletter, we highlighted the fact that our 5-Year Cheddar is on the menu at Zoe's Lounge in the Fairmont Chateau Laurier in Ottawa. And now more restaurants are adding Canada's favourite cheddar to their menu.
If you're at the Sierra Grill in Toronto, there's a great lunchtime selection of a Balderson Cheddar and Bacon rye sandwich on the menu. In Ottawa, the Courtyard Restaurant offers its customers a “grown up grilled cheese sandwich” of Aged Balderson Cheddar melted between sourdough bread and an apple condiment. Also in the nation's capital, the Wellington Gastro Pub features Balderson 3-Year Heritage Cheddar in a wild mushroom and potato gnocchi dinner. And a third Ottawa establishment, Sterling's Steak & Seafood Restaurant, has a Aged Balderson Cheddar with a pear and onion compote on their canapé menu.
Further south, Niagara-on-the-Lake's Prince of Wales Hotel offers a beef strip loin with Balderson mashed potatoes and caramelized onions on their catering menu.
